Why Subo Boracay is special ?
Subo Boracay is the newest culinary landmark in Boracay Island. It is the premier Filipino restaurant in the island and should be on your short list. Subo Boracay is the brain (and love) child of passionate traveler, entrepreneur, antiques collector and the champion behind the successful Happy Planet chain of boutiques (formerly a bespoke furniture and home accessory chain called Lonely Planet) Boyet Sacdalan and the equally passionate and renowned Filipino chef and restaurateur Sunny de Ocampo.
Subo Boracay entices your discriminate palette and indulges your senses in a culinary adventure with a gastronomic kaleidoscope of outrageously delightful and unforgettable experiences. Inspired by trippy travel adventures and misadventures, this hippy-go-lucky duo traipsed around the country to see, discover, explore, “and of course to devour the best of Philippine culture and cuisine!”
Showcasing the “Old” historical Philippines and its traditions, they reinvent the experience with a modern take by merging the old and the new worlds in an architectural and design masterpiece of a setting, and a vibrant menu that is reminiscent of grandmother’s secret recipes yet so exciting that you feel the flavors dancing in your mouth.
Must try dishes :
Paro Paro - a flame grilled butterflied chicken in achuete oil, turmeric, lemongrass and chili with papaya atchara relish and crushed peanuts
Kare Kare - a slow braised beef, tripe and oxtail in achuete peanut sauce with snake beans, eggplant, baby choy sum and okra accompanied with shrimp paste
Buko Beef Puso Salad - shredded fresh young coconut with seared tender beef slices, banana blossom, green beans, cucumber, tomato, fried shallots, garlic, chili and fragrant herbs

Reviews
We went on this Restaurant through the suggestion of one of my friend. Everything is Great from Food to Ambiance I also love the uniqueness of this place. From the moment I enter their door every guest should leave their footwear (shoes/slippers/sandals) outside. A lady receptionist assisted us on our table and take our order as well. It feels like your back on the year of Filipino-Spanish era because of the set-up and ambiance of this place. Each time I dined on a restaurant I 'm really particular on the Food Taste and Service. This restaurant really catch my taste buds but not the service I expect. We ordered for a two main course and dessert. While waiting for our food to be served they gave us a complimentary appetizer which they really offer on every guest. It was so nice! but forgot to ask the name of that starter. Then few minutes after our food arrived (Honey Soy Barbeque Pork Ribs) but it was just one main course together with our rice. It smells and looks delicious that craved us to eat it immediately. So we just started to eat with that food while waiting for the other one. I forgot the other food that we order, minutes after like were nearly done with that first food we wonder why the other food doesn't come yet so we raised for our hands to caught the servers attention. We follow-up our order. Minute after the lady receptionist went on our front and said "Sorry ma'am/sir I forgot to send your order! I thought its just one Food you've order". We said its Ok just do fastest you can to served us the food for were about to finish with the first one. After about 3 minutes she get back on us and informed us that the food will take about 5 minutes. After 5 minutes another server informed us that it will take 3 minutes again. After hearing it we thought of cancelling the food but also thinking of doing it which they already started to cooked might be charged on them for the cost. So we just patiently wait for the food. After 5 minutes finally the arrived and the server ask for an apology. We immediately ask for the bill, ate that food and pay for it. I will still back on this restaurant just for the food but not for the Service!
