Why Oyster Omelette King is special ?
Oyster Omelette King at Ningxia market is one of must try food when you are in Taipei. You've got something from the sea and something from the soil.
The famous Taiwan oyster omelette is popular in many places in Taiwan. For some reason, it draws locals to a few famous shops at Ning Xia. The omelette is made with eggs, veggies, and oysters. It's a must try at least once when in Taiwan. The eggs are the perfect foil for the little oysters easily found around the island, while sweet potato starch is added to give the whole thing a gooey chewiness -- a signature Taiwan food texture. No wonder the soup was voted best snack to represent Taiwan in a poll of 1,000 Taiwanese by Global Views Monthly a few years back.

Tips for you
It is a shop with conspicuous yellow signboard is located along the road of the Night Market. I've confused when finding this shop and it took me 10 minutes to do it. Oyster omelet was cooked at the entrance of the shop and you could watch it. This stunning omelet was full of oysters, it was jammed with eggs and sauce. It's a recommended store.
The best fried oyster I have eaten so far on Taiwan! It's crispy!
