Just devoured a most delicious curry snapper head at the Kayu Nasi Kandar at Kota Damansara. I personally find this Restaurant the best Kayu branch there is. Tonight was a further testament. We chose a large snapper fish head and it came garnished with fresh coriander, fresh spring onion, fresh green chillies and freshly fried onions and curry leaves. The curry gravy was delicious as ever but nothing different from earlier visits. But tonight's fish head was exceptional. The snapper fish was extremely fresh. You can practically taste every part of the head and can tell the different taste and textures of the eyeball, lips, cheek, the dark bits around the brains and the different texture/taste of the skin from the different parts of the head (I wonder if Hannibal would have bothered with human flesh if he has tasted the fresh snapper head first). The meat peels off easily; the sweetness of the meat can be tasted even with the hundreds of different spices. You can tell and study the meats from the different parts of the head and I find the bit close to the cheekbone the tastiest. I also discovered from the many heads eaten that the best barometer the level of freshness of the fish is to actually suck out and eat the jelly- like flesh inside the eye socket. Tonight's snapper was heavenly.
