Why Lam Ah Coffee Shop is special ?
The beef soup stock is made from slow-boiling meat, bones & innards till they are tender. Great stuff! A typical bowl of beef koay teow will consist of beef shin, tendons, tripe & meatballs, garnished with crisp-fried garlic and fresh, chopped coriander leaves.
Another must-not-miss dish at Lam Ah is the oyster omelette (“oh-chian”) from the other stall. The version here is quite unique - the stall-owner meticulously prepares his oh-chien using a two-step process: first he fries an ultra-crispy part-crepe/part-omelette using eggs & a tapioca starch mixture.
Then, he stir-fries tiny fresh oyster in a strong chilli-bean-paste gravy mixture separately, after which he'll then pour over the crispy egg omelette-crepe and served immediately. Best in the world!
